Bacon Wrapped Scallops
Ingredients
- 12 large sea scallops patted dry
- 12 slices of bacon
- Salt and pepper to taste optional, depending on preference and diet adherence
- Toothpicks for securing the bacon around the scallops
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a wire rack for even cooking.
- Prepare the Scallops: If the scallops have a small side muscle, remove it. Season lightly with salt and pepper if desired.
- Partially Cook Bacon: Since scallops cook quickly, partially cook the bacon until it’s beginning to brown but is still pliable, not crispy. This can be done in a skillet over medium heat or in the oven. Let it cool slightly.
- Wrap Scallops: Wrap a slice of the partially cooked bacon around the circumference of each scallop. Secure it with a toothpick.
- Bake: Arrange the bacon-wrapped scallops on the prepared baking sheet or wire rack. Bake in the preheated oven for about 12-15 minutes, or until the scallops are opaque and the bacon is crisp.
- Broil for Crispness (Optional): For extra crispiness, broil the scallops for an additional 1-2 minutes, watching carefully to prevent burning.
- Serve: Remove from the oven and serve immediately. The scallops should be tender and juicy, with a perfectly crisp bacon wrap.
