Ingredients

  • 1 cup frozen mixed berries
  • ½ cup coconut milk use the thick part from the top of the can for extra creaminess
  • ¼ cup coconut yogurt
  • 1 banana sliced and frozen
  • 1 Tbsp chia seeds
  • 1 Tbsp honey or maple syrup optional, for sweetness

Toppings:

  • additional berries, sliced banana, shredded coconut and chia seeds

Instructions

  • In a blender, combine the frozen mixed berries, coconut milk, coconut yogurt, frozen banana, chia seeds, and honey or maple syrup if using. Blend until smooth and creamy. If the mixture is too thick, add a little more coconut milk until you reach your desired consistency.
  • Pour the smoothie mixture into a bowl. The joy of a smoothie bowl lies in its creamy, spoonable texture, so aim for a thick consistency that will hold your toppings.
  • Artfully arrange your chosen toppings over the smoothie base. Mix textures and colors by adding fresh berries, banana slices, a sprinkle of shredded coconut, a handful of gluten-free granola, and a few more chia seeds for crunch. Finish with a final drizzle of honey or maple syrup for a touch of sweetness. Serve immediately, diving into a bowl that’s a feast for the senses.

Tip:

  • For an extra protein boost, consider adding a scoop of your favorite gluten-free protein powder to the smoothie blend.
