Steak Bites with Veggies
Ingredients
- 2 T olive oil
- 1 red onion sliced
- 3 garlic cloves minced
- 2- inch piece fresh ginger grated
- 1 t cumin seeds
- ½ t ground turmeric
- ½ t curry powder
- ½ lb flank steak cut into small pieces
- ½ red bell pepper chopped
- ½ zucchini cubed
- 2 cups cauliflower rice
- Sea salt and black pepper to taste
- 1 T chopped fresh parsley
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and cook for 1 minute. Add the garlic and ginger and cook for 30 seconds, or until fragrant. Stir in the cumin seeds, turmeric, and curry powder. Cook for 1 minute.
- Add the steak and cook for 6 minutes, stirring occasionally to cook the steak on all sides. Add the bell pepper and zucchini. Cook for 3 minutes, or until nearly tender. Add the cauliflower rice, season with sea salt and black pepper to taste, and cook for 5 minutes, or until the cauliflower is tender. Top with the parsley and serve.
