Ingredients
  

  • 2 T olive oil
  • 1 red onion sliced
  • 3 garlic cloves minced
  • 2- inch piece fresh ginger grated
  • 1 t cumin seeds
  • ½ t ground turmeric
  • ½ t curry powder
  • ½ lb flank steak cut into small pieces
  • ½ red bell pepper chopped
  • ½ zucchini cubed
  • 2 cups cauliflower rice
  • Sea salt and black pepper to taste
  • 1 T chopped fresh parsley

Instructions
 

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and cook for 1 minute. Add the garlic and ginger and cook for 30 seconds, or until fragrant. Stir in the cumin seeds, turmeric, and curry powder. Cook for 1 minute.
  • Add the steak and cook for 6 minutes, stirring occasionally to cook the steak on all sides. Add the bell pepper and zucchini. Cook for 3 minutes, or until nearly tender. Add the cauliflower rice, season with sea salt and black pepper to taste, and cook for 5 minutes, or until the cauliflower is tender. Top with the parsley and serve.
