Beef and Avocado Rice Bowl
Ingredients
- 1 t lemon juice
- ¼ t chili powder
- ¼ t dried oregano
- ¼ t garlic powder
- Sea salt to taste
- 2 T olive oil divided
- ½ lb beef sirloin steak
- 1 garlic clove minced
- 2 cups cauliflower rice
- 2 T chopped fresh parsley
- 2 radishes sliced
- 6 cherry tomatoes halved
- ½ red onion sliced
- ½ avocado sliced
- Black pepper to taste
Instructions
- In a small bowl, combine the lemon juice, chili powder, oregano, garlic powder, ¼ teaspoon sea salt, and 1 tablespoon of the olive oil. Mix well. Rub both sides of the steak with the spice mixture.
- In a nonstick skillet over medium heat, cook the steak for 3 minutes on each side, or until desired doneness. Set aside to rest.
- In a separate skillet over medium heat, heat the remaining 1 tablespoon olive oil. Add the garlic and cook for 30 seconds, or until fragrant. Add the cauliflower rice and ¼ teaspoon sea salt. Stir well and cook for 5 minutes, or until tender. Add the parsley and stir.
- Slice the steak. In 2 bowls, layer the cauliflower rice followed by the steak. Add the radishes, tomatoes, onion, and avocado. Season with sea salt and black pepper to taste.
