Black and White Cake
Ingredients
For the batter:
- ½ cup coconut flour
- ½ cup cocoa powder
- 2 t baking powder
- ½ cup erythritol sweetener
- 4 large eggs whisked
- 1 t vanilla extract
- 14 oz heavy cream
For the filling:
- ½ cup heavy cream
- 8 oz full-fat cream cheese
- ½ cup erythritol powder
Instructions
Make the cake:
- Preheat the oven to 350°F. Grease a 7-inch round baking pan with butter.
- In a large bowl, mix the coconut flour, cocoa powder, baking powder, and sweetener. Add the whisked eggs, vanilla extract, and heavy cream. Stir to combine.
- Transfer the cake batter to the prepared pan. Bake for 1 hour or until a toothpick inserted in the center comes out clean. Let the cake cool.
Make a filling:
- In a bowl, add the heavy cream with the cream cheese, and erythritol powder and whisk until combined.
- When the cake is completely cool, turn the cake out onto a serving plate. With a sharp knife, cut the cake horizontally into 2 layers. Evenly spread the filling on the bottom layer. Stack the second layer on top of the filling.
- Sprinkle cake crumbs on top, if desired.
