Spicy Beef Salad
Ingredients
- ½ lb beef sirloin steak
- 1 t + 1 T olive oil
- Sea salt and black pepper to taste
- ½ t dried thyme
- 10 cherry tomatoes halved
- ½ red bell pepper chopped
- ½ green bell pepper chopped
- ½ yellow bell pepper chopped
- ½ English cucumber sliced
- 1 t lime juice
- 1 T hot chile flakes
- ¼ t cayenne pepper
- 1 T chopped fresh parsley
Instructions
- Rub the steak with 1 teaspoon of the olive oil, ½ teaspoon sea salt, ½ teaspoon black pepper, and the thyme.
- Coat a skillet with nonstick cooking spray and place over medium heat. Add the steak and cook for 4 minutes on each side, or until desired doneness. Allow to cool a bit and then slice it.
- In a large bowl, combine all of the vegetables.
- In a small bowl, combine the remaining 1 tablespoon olive oil, lime juice, chile flakes, cayenne pepper, and sea salt and black pepper to taste. Whisk well. Pour the dressing over the vegetables and toss well. Add the steak and top with the parsley.
