Sausage and Cheese Calzone

Ingredients
  

For the dough:

For the filling:

  • 2 T olive oil
  • 1 garlic clove minced
  • 6 oz pork sausage meat
  • Sea salt and black pepper to taste
  • 1 tomato diced
  • ¾ cup shredded mozzarella cheese
  • 1 large egg whisked
  • ½ cup no-sugar-added tomato sauce optional
  • 1 T chopped fresh parsley for garnish

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Make the dough: In a bowl, mix the almond flour, coconut flour, xanthan gum, and sea salt. Add the eggs and mix to make a dough. Knead the dough. Let the dough rest for 10 minutes, covered with plastic wrap.
  • Make the filling: In a skillet, heat the olive oil over medium-high heat. Add the garlic and cook for about 30 seconds, or until fragrant. Add the sausage meat, sea salt, and black pepper. Cook for about 10 minutes, or until browned and cooked through. Add the tomato, stir well and turn off the heat.
  • Divide the dough into 4 equal-sized balls. On a lightly floured surface, roll out each ball into a circle. Arrange ¼of the sausage filling and mozzarella cheese on half of each calzone. Fold the dough over the filling and crimp the edges to close the calzone. Arrange the calzones on the prepared baking sheet. Brush the tops with the whisked egg. Bake for 15 minutes or until golden brown.
  • Serve with tomato sauce topped with the parsley.
