Paleo Ramen Zoodle Bowl
Ingredients
For The Soup:
- 6 cups chicken bone broth
- ¼ cup coconut aminos
- 1 t grated ginger
- 2 T lime juice
For The Toppings:
- 4 cups zucchini noodles
- ⅔ cup green onion chopped
- 2 baby bok choy halved lengthwise
- ⅔ cup radishes matchsticksliced
- 2 soft-boiled eggs halved
- 1 t black sesame seeds
- ⅓ cup fresh basil leaves
- 1 lime cut into wedges
Instructions
- Combine the chicken bone broth, coconut aminos, ginger, and lime juice in a medium saucepan, and heat to a rolling boil, about 8 minutes.
- Ladle the hot broth into 4 serving bowls, and equally divide the zucchini noodles, green onions, bok choy, and radishes into each bowl. Allow the vegetables to cook in the hot broth for 3 minutes.
- Top each bowl with the soft-boiled egg halves, then garnish with sesame seeds, basil, and a squeeze of lime. Serve hot and enjoy!
