Keto Zucchini Muffins
Ingredients
- 7 tablespoon of coconut flour
- 1 tablespoon ground flaxseeds
- 1 cup of Erythritol
- 2 teaspoon of glutenfree baking powder
- 1 teaspoon of cinnamon
- 3 whole eggs
- 1 cup of zucchini shredded
- 1/3 cup of carrot grated
- ¼ cup of unsweetened almond milk
- ½ teaspoon of apple cider vinegar
Instructions
- Preheat your oven to 350 degrees F
- Prepare your muffin tin and keep it on the side
- Whisk in eggs and add broccoli, coconut oil, keep the mix on the side
- Take another bowl and add dry ingredients, mix well and add the egg mix
- Gently mix until combined
- Pour batter into muffin tin and bake for 20 minutes until golden brown
- Remove and let them cool
- Serve and enjoy!
