- 7 tablespoon of coconut flour
- 1 tablespoon ground flaxseeds
- 1 cup of Erythritol
- 2 teaspoon of glutenfree baking powder
- 1 teaspoon of cinnamon
- 3 whole eggs
- 1 cup of zucchini shredded
- 1/3 cup of carrot grated
- ¼ cup of unsweetened almond milk
- ½ teaspoon of apple cider vinegar
Preheat your oven to 350 degrees F
Prepare your muffin tin and keep it on the side
Whisk in eggs and add broccoli, coconut oil, keep the mix on the side
Take another bowl and add dry ingredients, mix well and add the egg mix
Gently mix until combined
Pour batter into muffin tin and bake for 20 minutes until golden brown
Remove and let them cool
