Ingredients
  

  • 2 pounds of zucchini
  • 5 eggs
  • 1 pound of cheese
  • 3 oz. of butter
  • 3 oz. of grits

Instructions
 

  • Wash zucchini. Dry and grate into thick pieces. Cover them with salt and let them release the water.
  • In one bowl, whisk eggs. Add cheese and grits.
  • Put butter in a casserole dish and let it melt at medium heat.
  • Then, add zucchini and cover with cheese mixture.
  • Bake 40 minutes and then enjoy!
