Keto Cheesy Meatball Zucchini Boats

This is one of my favorite meals when I’m in the mood for Italian without breaking all the (Keto) rules and without all the fuss.  I bet you won’t even miss the noodles. The recipe is also kid approved.  My kids can throw these down!  Have this healthy, satisfying and tasty meal ready in 20-25 minutes.  Ready, set, go!

First you need to cut your zuchinni’s lengthwise into boats. 

Add those prepared meatballs to your boats.

Serve with extra parmesan and tomatoes. 

Keto Cheese Meatballs

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 2

Ingredients
  

  • 1 lb ground beef
  • 1 cup parmesan cheese
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp italian seasoning
  • 1 egg
  • 1 tbsp almond flour
  • 2 zucchinis, large

Instructions
 

  • Preheat oven to 400 degrees.
  • Grate the parmesan cheese.
  • Mix all dry ingredients with the ground beef
  • Mix cheese in with ground beef.
  • Slice zuchinnis longwise.
  • Roll meat into 1.5 inch diameter balls.
  • Lightly grease cookie sheet with olive oil. Place meatballs on zuchinni slices, about 4 depending on size of zuchinni.
  • Cook zuchinni boats for 20-25 minutes until meat is browned and cooked through.
