Ingredients
- 3 spring onions chopped
- 1 bell pepper diced
- 4 cherry tomatoes chopped
- Handful of spinach
- 1/2 teaspoon salt
- 6 whole eggs
- 1 teaspoon curry powder
Instructions
- Preheat your oven to 390 degrees F
- Grease muffin tins and keep them on the side
- Add vegetables to a bowl and season with salt, toss
- Beat eggs and add to the veggies
- Mix well Sprinkle curry powder
- Pour batter into muffin tin
- Bake for 15-20 minutes
- Let it cool and serve
- Enjoy!
