Ingredients
  

  • 3 spring onions chopped
  • 1 bell pepper diced
  • 4 cherry tomatoes chopped
  • Handful of spinach
  • 1/2 teaspoon salt
  • 6 whole eggs
  • 1 teaspoon curry powder

Instructions
 

  • Preheat your oven to 390 degrees F
  • Grease muffin tins and keep them on the side
  • Add vegetables to a bowl and season with salt, toss
  • Beat eggs and add to the veggies
  • Mix well Sprinkle curry powder
  • Pour batter into muffin tin
  • Bake for 15-20 minutes
  • Let it cool and serve
  • Enjoy!
