Keto Spinach Puree

Ingredients
  

  • 1 Tbsp lard or ghee
  • 1 lb frozen spinach-drained
  • 1 clove garlic minced
  • Salt and fresh-ground black
  • pepper to taste
  • 1 cup heavy cream
  • 3/4 cup Parmesan
  • cheese

Instructions
 

  • Remove the frozen spinach from the box and place it in a microwave-safe bowl for 1 - 2 minutes.
  • Microwave the spinach for 1-2 minutes or until the spinach becomes soft.
  • Drain the spinach in a colander.
  • Grease the inner pot your Crock Pot with lard.
  • Add the spinach, minced garlic, and salt and pepper into your Crock Pot; stir well. Cover and cook on HIGH for 2 hours.
  • Open the lid and stir cream and Parmesan cheese. Taste and adjust salt and pepper. Let sit for 10 minutes.
  • Give a good stir and serve.
