Bacon and Spinach Frittata
Ingredients
- 12 large eggs
- ½ cup full-fat coconut milk
- 6 slices bacon chopped
- 4 cups spinach chopped
- ⅛ t sea salt to taste
- ⅛ t black pepper to taste
Instructions
- Preheat oven to 350°F.
- Whisk the eggs with the coconut milk in a large bowl.
- Set aside.
- Cook the bacon in a skillet until crisp. Remove the bacon from the skillet, and set aside.
- Add the spinach to the skillet with the bacon fat, and cook until just wilted.
- Pour the egg mixture into the skillet, and season with salt and pepper.
- Bake for 15–20 minutes until the eggs are set.
- Top with cooked bacon before serving.
