Bacon and Spinach Frittata

Ingredients
  

  • 12 large eggs
  • ½ cup full-fat coconut milk
  • 6 slices bacon chopped
  • 4 cups spinach chopped
  • t sea salt to taste
  • t black pepper to taste

Instructions
 

  • Preheat oven to 350°F.
  • Whisk the eggs with the coconut milk in a large bowl.
  • Set aside.
  • Cook the bacon in a skillet until crisp. Remove the bacon from the skillet, and set aside.
  • Add the spinach to the skillet with the bacon fat, and cook until just wilted.
  • Pour the egg mixture into the skillet, and season with salt and pepper.
  • Bake for 15–20 minutes until the eggs are set.
  • Top with cooked bacon before serving.
