Keto Spicy Kale & Egg Salad
Ingredients
- 8 oz broccoli (chopped).
- 4 oz kale (chopped).
- 4 large eggs (hard boiled).
- 2 avocados (pitted and sliced).
- 2 garlic cloves (sliced).
- 1 red onion (chopped).
- 2 tbsp olive oil.
- 1 tbsp mustard.
- 1 tsp chilli flakes.
- ½ cup mayonnaise.
Instructions
- In a large frying pan, heat the oil and fry the garlic and remove from pan.
- Fry broccoli and kale until slightly softened.
- Mix mayonnaise with mustard.
- Cut eggs into quarters.
- Plate broccoli and kale, add avocados, chopped raw onion, chilli flakes and egg quarters.
- Drizzle over mustard mayonnaise.
