Keto Spicy Kale & Egg Salad

Ingredients
  

  • 8 oz broccoli (chopped).
  • 4 oz kale (chopped).
  • 4 large eggs (hard boiled).
  • 2 avocados (pitted and sliced).
  • 2 garlic cloves (sliced).
  • 1 red onion (chopped).
  • 2 tbsp olive oil.
  • 1 tbsp mustard.
  • 1 tsp chilli flakes.
  • ½ cup mayonnaise.

Instructions
 

  • In a large frying pan, heat the oil and fry the garlic and remove from pan.
  • Fry broccoli and kale until slightly softened.
  • Mix mayonnaise with mustard.
  • Cut eggs into quarters.
  • Plate broccoli and kale, add avocados, chopped raw onion, chilli flakes and egg quarters.
  • Drizzle over mustard mayonnaise.
