Keto Lamb Sun-dried Tomato Meatloaf

  • lbs ground lamb
  • 1 tablespoon fresh rosemary
  • ½ cup sun-dried tomatoes
  • 2 large shallots
  • 4 garlic cloves
  • 2 tablespoon balsamic vinegar
  • 2 large eggs
  • Pepper
  • Salt


  • Preheat the oven 375 F/ 190 C.
  • Spray a loaf pan with cooking spray and set aside.
  • In a bowl, whisk together eggs, salt, pepper, and vinegar.
  • Add rosemary, sun-dried tomatoes, shallots, and garlic and mix well.
  • Add lamb and mix just until combined.
  • Pour meatloaf mixture into the prepared pan and bake in preheated oven for 40-45 minutes.
  • Slice and serve.
