- 1½ lbs ground lamb
- 1 tablespoon fresh rosemary
- ½ cup sun-dried tomatoes
- 2 large shallots
- 4 garlic cloves
- 2 tablespoon balsamic vinegar
- 2 large eggs
- Pepper
- Salt
Preheat the oven 375 F/ 190 C.
Spray a loaf pan with cooking spray and set aside.
In a bowl, whisk together eggs, salt, pepper, and vinegar.
Add rosemary, sun-dried tomatoes, shallots, and garlic and mix well.
Add lamb and mix just until combined.
Pour meatloaf mixture into the prepared pan and bake in preheated oven for 40-45 minutes.
Slice and serve.
