Keto Aromatic Avocado and Eggs “Porridge”
- 4 large eggs free-range
- 1 avocado cut into cubes 1/2 tsp fresh parsley, finely chopped
- 1/4 tsp mint leaves finely chopped
- 1/2 lemon freshly squeezed
- Salt and pepper to Taste
- Boil the eggs (about 12 minutes for large eggand cut them into 8 pieces.
- Peel the avocado and cut into small cubes.
- Combine the eggs and the avocado in a bowl; sprinkle with the herbs and pour lemon juice.
- Season with the salt and pepper, stir well and serve.
