Ingredients
  

  • 4 large eggs free-range
  • 1 avocado cut into cubes 1/2 tsp fresh parsley, finely chopped
  • 1/4 tsp mint leaves finely chopped
  • 1/2 lemon freshly squeezed
  • Salt and pepper to Taste

Instructions
 

  • Boil the eggs (about 12 minutes for large eggand cut them into 8 pieces.
  • Peel the avocado and cut into small cubes.
  • Combine the eggs and the avocado in a bowl; sprinkle with the herbs and pour lemon juice.
  • Season with the salt and pepper, stir well and serve.
