Keto Easy Shrimp and Asparagus Bake

Much like the  rest of the world at this time, we find ourselves eating at home more often than ever.  The silver lining of the pandemic has been more healthy meals enjoyed at home, as a family.  We also been pushed creatively to come up with healthy adaptations of our favorite meals that we typically enjoy dining out. 

We didn’t used to cook a significant amount of seafood at home.  This dish is one of our new favorite special dinners in that features shrimp and, if you’re really feeling fancy, pare it with this incredible keto friendly 7-ingredient cloud bread.   It’s buttery, it’s cheesy, it’s garlic-y, it’s so tasty you won’t miss Red Lobster one bit 😉

Here is my shrimp and asparagus with only eight ingredients and 20 minutes of prep.  Try it out and be sure to let me know what you think!

Keto Easy Shrimp and Asparagus Bake

Servings 2
Calories 264 kcal

Ingredients
  

  • 1 tablespoon ghee
  • 1 tbsp butter
  • 3 garlic cloves
  • 14 asparagus spears
  • ½ lb large shrimp shell removed, tail on
  • paprika to taste
  • dried or fresh parsley to taste
  • ¼ cup cheddar cheese, shredded

Instructions
 

  • Pre-heat oven to 375 F
  • Smear ghee, coconut oil, and minced garlic into a paste. Microwave until melted.
  • Lay asparagus spears on a foil-lined rimmed pan and brush the spears with the melted ghee/garlic/oil mixture. Place pan on the middle rack of the pre-heated oven and bake for 6 minutes. Remove from the oven.
  • Add prepared shrimp to the pan and drizzle the remainder of the ghee/ garlic/oil mixture. Return the pan to the oven and continue roasting for 10 more minutes or until the shrimp is done.
