Crispy Chicken Sandwich
Ingredients
- ¼ cup grated Parmesan cheese
- ½ T chili powder
- ½ t onion powder
- ½ t garlic powder
- 2 T pork rind crumbs
- Sea salt and black pepper to taste
- 1 large egg whisked
- 1 4-oz boneless, skinless chicken breast, thinly sliced lengthwise
- 1 T avocado oil
- 2 Keto bun
Toppings:
- ½ cup lettuce mix
- 1 Roma tomato sliced
- 1 small cucumber sliced
- 1 T avocado oil mayonnaise
Instructions
- In a bowl, combine the Parmesan cheese, chili powder, onion powder, garlic powder, pork rinds, sea salt, and black pepper. Mix well.
- Put the whisked egg in a shallow bowl. Arrange the pork rinds mixture in a shallow plate.
- Dip the chicken in the egg and then dredge it in the pork rinds mixture.
- In a skillet, heat the avocado oil over medium-high heat.
- Add the chicken and cook for 8 to 10 minutes, flipping over after 5 minutes.
- Arrange the lettuce leaves on the bottom of the buns.
- Top each bun with the chicken, tomato slices, cucumber slices, and avocado mayonnaise. Top with a bun cap and serve
