Coconut Leek Soup
Ingredients
- 1 t olive oil
- 1½ lbs boneless chicken thighs cubed
- 1 leek sliced
- 16 oz button mushrooms sliced
- 1 red bell pepper sliced
- 20 oz chicken stock or bone broth
- ¼ t stevia liquid
- 8 oz full-fat coconut milk
- 1 T lime juice
- 1 T minced fresh ginger
- 2 T chopped fresh cilantro
- 1 lime wedges
Instructions
- Grease a 4- to 6-quart slow cooker with the olive oil.
- Place the chicken, leek, mushrooms, bell pepper, chicken stock, stevia, coconut milk, lime juice, and ginger in the slow cooker. Cover and cook on LOW for 6 hours or until chicken is cooked through.
- Divide between bowls, top with the cilantro and serve with lime wedges.
