Ingredients
  

  • 1 t olive oil
  • lbs boneless chicken thighs cubed
  • 1 leek sliced
  • 16 oz button mushrooms sliced
  • 1 red bell pepper sliced
  • 20 oz chicken stock or bone broth
  • ¼ t stevia liquid
  • 8 oz full-fat coconut milk
  • 1 T lime juice
  • 1 T minced fresh ginger
  • 2 T chopped fresh cilantro
  • 1 lime wedges

Instructions
 

  • Grease a 4- to 6-quart slow cooker with the olive oil.
  • Place the chicken, leek, mushrooms, bell pepper, chicken stock, stevia, coconut milk, lime juice, and ginger in the slow cooker. Cover and cook on LOW for 6 hours or until chicken is cooked through.
  • Divide between bowls, top with the cilantro and serve with lime wedges.
