In a bowl, combine the Parmesan cheese, chili powder, onion powder, garlic powder, pork rinds, sea salt, and black pepper. Mix well.
Put the whisked egg in a shallow bowl. Arrange the pork rinds mixture in a shallow plate.
Dip the chicken in the egg and then dredge it in the pork rinds mixture.
In a skillet, heat the avocado oil over medium-high heat.
Add the chicken and cook for 8 to 10 minutes, flipping over after 5 minutes.
Arrange the lettuce leaves on the bottom of the buns.
Top each bun with the chicken, tomato slices, cucumber slices, and avocado mayonnaise. Top with a bun cap and serve
