Ingredients

  • 2 ribeye steaks approximately 1-inch thick
  • 4 large eggs
  • 2 tablespoons unsalted butter
  • Salt to taste

Instructions

Prepare the Steaks:

  • Remove the steaks from the refrigerator and let them sit at room temperature for about 10 minutes.
  • Season both sides generously with salt

Cook the Steaks:

  • Heat a large skillet over medium-high heat.
  • Add 1 tablespoon of unsalted butter to the skillet.
  • Once the butter has melted and is sizzling, place the steaks in the skillet.
  • Cook for 3-4 minutes on each side for medium-rare, or adjust the time according to your preferred level of doneness.
  • Once cooked, transfer the steaks to a plate and let them rest.

Prepare the Eggs:

  • In the same skillet, reduce the heat to medium-low.
  • Add the remaining 1 tablespoon of butter.
  • Crack the eggs into the skillet, being careful not to break the yolks.
  • Season with a pinch of salt.
  • Cook until the whites are set but the yolks remain runny, about 2-3 minutes.

Serve:

  • Place each steak on a plate.
  • Top each steak with two eggs.
  • Garnish with fresh thyme leaves if desired.
  • Serve immediately
