Ingredients
  

  • 2 cups of diced chicken breast about 500g
  • 4 cups of beef or chicken bone broth about 950ml
  • 1 cup of grated Parmesan cheese or any other hard, aged cheese that melts well
  • Salt and pepper to taste optional, depending on the flavor of your broth and cheese

Instructions
 

  • Cook the Chicken: In a large skillet or saucepan, add the diced chicken and 1 cup of bone broth. Cook over medium heat, allowing the chicken to simmer gently. The goal is to cook the chicken thoroughly while starting to reduce the broth.
  • Simmer: Once the first cup of broth has mostly been absorbed by the chicken, add another cup and continue to simmer. Keep the process slow to allow the chicken to become very tender and the broth to reduce after each addition.
  • Creamy Texture: Continue adding the remaining broth, one cup at a time, allowing each addition to be absorbed before adding the next. With the last cup of broth, the mixture should be creamy and slightly thickened, with the chicken being very tender.
  • Add Cheese: Once the broth is fully absorbed and the “risotto” has reached a creamy consistency, stir in the grated cheese until it melts into the risotto, adding a rich and savory flavor.
  • Season: Taste and add salt and pepper if needed, depending on the initial seasoning of your broth and cheese.
