Ingredients

  • 2 lbs about 900g beef sirloin, thinly sliced
  • 1 cup 240 ml sour cream
  • 1/2 cup 120 ml beef broth (optional, for added moisture)
  • 2 tsp 10 ml sea salt, or to taste

Optional:

  • 1/2 tsp 2.5 ml garlic powder (for those who include spices)

Instructions

  • Season Beef: Place the thinly sliced beef sirloin in the slow cooker. Season with sea salt and optional garlic powder.
  • Add Broth: If using, pour the beef broth over the beef to help maintain moisture during cooking.
  • Slow Cook: Cover and cook on low for 4-5 hours, or until the beef is tender.
  • Add Sour Cream: In the last 30 minutes of cooking, stir in the sour cream. Continue cooking until heated through and the sauce is creamy.
  • Final Seasoning: Adjust the seasoning with additional salt if needed before serving.
  • Serve: Serve the Carnivore “Beef Stroganoff” hot, ideally over a bed of buttery scrambled eggs
