Turkey Broccoli Cashew Bowls
Ingredients
- ¼ t ground ginger
- ½ t garlic powder
- Sea salt and black pepper to taste
- 8 oz turkey breast cubed
- 1 T olive oil
- 3 garlic cloves minced
- 1 t grated fresh ginger
- ½ t ground turmeric
- ¼ t curry powder
- ⅓ cup cashews
- ½ head broccoli cut into florets
- 2 T sour cream
Instructions
- In a small bowl, combine the ground ginger, garlic powder, ½ teaspoon sea salt, and ½ teaspoon black pepper. Rub the turkey with the spice mixture.
- In a large skillet, heat the olive oil over medium-high heat. Add the turkey and cook on all sides for 5 minutes, or until cooked through. Remove the turkey from the skillet and set aside.
- In the same skillet, combine the minced garlic, fresh ginger, turmeric, and curry powder. Sauté for 30 seconds, or until fragrant. Add the cashews and broccoli. Stir well and cook for 5 minutes, or until the broccoli is almost tender.
- Return the turkey to the skillet and cook for 3 minutes, or until heated through. Season with sea salt and black pepper to taste.
- Serve with the sour cream.
