Ingredients
  

  • 2 T olive oil
  • 1 onion diced
  • 3 garlic cloves minced
  • 1 t dried thyme
  • 6 oz ground turkey
  • cups frozen green beans thawed
  • ½ cup crushed tomatoes
  • ¼ cup crumbled goat cheese
  • 2 T chopped fresh parsley

Instructions
 

  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 1 minute, or until it begins to soften. Add the garlic and thyme, and cook for 30 seconds, or until fragrant.
  • Add the turkey and cook, breaking it up with a wooden spoon, for 5 minutes, or until no longer pink. Stir in the green beans and tomatoes. Simmer for 5 minutes. Top with the goat cheese, cover, and cook for 5 minutes, or until the cheese melts.
  • Sprinkle with the parsley and serve.
