In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 1 minute, or until it begins to soften. Add the garlic and thyme, and cook for 30 seconds, or until fragrant.
Add the turkey and cook, breaking it up with a wooden spoon, for 5 minutes, or until no longer pink. Stir in the green beans and tomatoes. Simmer for 5 minutes. Top with the goat cheese, cover, and cook for 5 minutes, or until the cheese melts.
