Sausage and Peppers
Ingredients
- 1½ lbs pork sausage
- 2 yellow onions sliced
- 1 sprig fresh thyme plus additional for garnish
- 3 juniper berries optional
- 1 cup chicken stock divided
- ½ cup cherry tomatoes
- 1 bay leaf
- ½ t sea salt
- ½ t black pepper
Instructions
- Slice the sausages in 1-inch thick pieces and transfer to a 4- to 6-quart slow cooker.
- Add the onions, thyme, juniper berries, ½ cup of the chicken stock, cherry tomatoes, and bay leaf. Season with the sea salt and black pepper and stir to combine.
- Pour in the remaining ½ cup chicken stock. Cover with and cook on LOW for 4 hours. Stir during the cooking time, if desired.
- Remove the bay leaf before serving. Garnish with fresh thyme, if desired.
