Sausage and Pepper Sandwich

Ingredients
  

  • 4 oz Italian sausage sliced lengthwise
  • 1 T olive oil
  • 1 onion sliced
  • 2 garlic cloves sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • ½ t dried basil
  • Sea salt and black pepper to taste
  • ½ t cayenne pepper
  • 2 5-inch Keto rolls or buns

Instructions
 

  • In a skillet, cook the sausages over medium heat for 8 to 9 minutes, turning them so they are cooked on all sides. Remove the sausages from the skillet and keep warm.
  • In the same skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 2 minutes. Add the garlic and cook for 30 seconds, until fragrant.
  • Add the bell peppers, basil, sea salt, black pepper, and cayenne and cook for 5 minutes, until the peppers are soft.
  • Return the sausages to the skillet, and cook for 1 minute.
  • Slice the rolls in half lengthwise and fill them with sausage and pepper mixture. Serve immediately.
