Pumpkin and Spinach Stew
Ingredients
- 2 T grass-fed butter softened
- ½ cup fresh spinach
- 1 tomato
- 10 oz pumpkin cubed
- 1 T olive oil
- 1 t paprika
- ½ t garlic powder
- ½ t sea salt
- ⅓ cup feta cheese crumbled
- 1 T lemon juice
Instructions
- Grease a 4- to 6-quart slow cooker pot with the butter.
- In a blender, purée the spinach and tomato.
- Place pumpkin into the slow cooker. Add the spinach mixture, the olive oil, paprika, garlic powder, and sea salt and stir well.
- Cover and cook on LOW for 3 to 4 hours.
- Sprinkle stew with the feta cheese and lemon juice just before serving.
