Ingredients
  

  • 2 T olive oil
  • 1 large yellow onion diced
  • 10 oz ground pork
  • 1 t dried oregano divided
  • ½ t dried basil
  • ½ t dried rosemary
  • ½ t sea salt
  • ½ t black pepper
  • 2 zucchini sliced
  • 1 cup unsweetened tomato sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup black olives pitted

Instructions
 

  • Preheat the oven to 400°F.
  • In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook for 1 minute, or until it begins to soften. Add the pork, ½ teaspoon of the oregano, the basil, rosemary, sea salt, and pepper. Stir to combine. Cook, breaking up the pork with the back of the spoon, for 3 minutes, or until it is no longer pink. Add the zucchini and tomato sauce. Simmer for 3 minutes, or until the zucchini begins to soften.
  • Transfer the mixture to a rectangular baking dish. Add the mozzarella and top with the olives. Sprinkle with the remaining ½ teaspoon oregano. Bake for 15 minutes, or until heated through and the cheese is melted.
