Ingredients
  

  • 200 g 7 oz beef liver
  • 1 lemon wedge
  • 1 tbsp animal fat of choice such as tallow or duck fat
  • Salt and pepper

Instructions
 

  • Season the beef liver with salt, pepper, and any desired spices.
  • Heat a skillet over medium-high heat and add the liver. Sear for about 2 minutes per side or until cooked to your desired doneness.
  • To make the sauce, melt the animal fat in a pan, add a squeeze of lemon juice, and whisk until combined. Serve the sauce on top of the cooked liver.
