Heat the Duck Fat:
- In a large skillet, heat the duck fat over medium-high heat until shimmering.
Sear the Scallops:
- Carefully place the scallops in the skillet, ensuring they are not touching.
- Sear for 1.5 to 2 minutes on the first side without moving them, allowing a golden crust to form.
- Flip the scallops and sear for an additional 1.5 to 2 minutes on the other side until opaque and cooked through.
Serve:
