Keto Triple Berry Smoothie

Creating the perfect smoothie is a true art form.  When I was about eight years old, and first started to take an interest in cooking, my best friend and I used to play a game like Top Chef (but for smoothies).  Somehow in our efforts to be creative, managed to craft the most ridiculously inedible smoothies.  Now aren’t you excited to try my recipe?!  Ha!  

So I have had quite a few years of practice to make drastic improvements to my smoothie making art form.   I’ve learned that making the perfect smoothie is so much more than throwing a bunch of frozen fruit in the blender.  You need a liquid which is often a type of juice, but I prefer to use coconut or almond milk.  These also help thicken the smoothie to a more creamy consistency.  

The added challenge here is to create a balanced smoothie that is not going to trigger a blood sugar spike and leave you hungry an hour later.   This smoothie is great when you’re looking for a sweet snack or breakfast, a break from other forms of animal protein.   If you’re currently on a Keto protocol, you may be aware that most fruits are off limits with the exception of berries.  To create a balanced smoothie, I added healthy fats in the form of coconut  oil, almond milk, and hydrolyzed gelatin protein.   My favorite brand is Great Lakes but I also use Vital Proteins brand.  
Try out this (toddler) approved smoothie and feel free to spice it up to your liking… literally in the form of spices, fresh greens or maybe even some mint.

Keto Triple Berry Smoothie

Ingredients
  

  • 1 cup crushed ice
  • 1⁄2 cup unsweetened almond milk
  • 1 tablespoon coconut oil
  • 1⁄2 cup blueberries
  • 1⁄2 cup raspberries
  • 1⁄2 cup blackberries
  • 1⁄2 teaspoon pure vanilla extract
  • 2 tbsp hydrolyzed gelatin (ex. Great Lakes)

Instructions
 

  • In a blender, place 1⁄2 cup of ice. Add the almond milk and coconut oil. Blend to combine.
  • Add the blueberries, raspberries, blackberries, vanilla, and remaining 1⁄2 cup of ice.
  • Blend for 1 minute, or until smooth, and serve.
