Keto Seafood with Ouzo Casserole
Ingredients
- 1/2 lb squid cleaned in thin washers
- 1 bay leaf
- 1 tsp allspice
- 2 Tbsp garlic-infuse olive oil
- 1 onion finely chopped
- 3 medium zucchini sliced
- 1 cup fresh chard
- 1/2 glass Ouzo
- 1 lb shrimp cleaned
- 1/2 lb mussels without shell
- 1 1/2 cups feta cheese crumbled
- 2 Tbsp parsley finely chopped
- 1/2 cup olive oil
- Salt and black pepper to taste
Instructions
- Preheat oven to 400F/200C.
- Boil the squid in water with the bay leaf and the allspice for 15 minutes until they tender and drain.
- Heat the oil in the frying skillet and sauté the onion until
- softened; season with the salt and pepper. Add sliced zucchini and fresh chard. Pour the ouzo and let simmer for 10 minutes over low heat.
- Add shrimps, mussels, and squid; stir Allow to simmer for 3-5 minutes until the shrimp changes color and remove from the heat.
- Pour the seafood mixture into a large greased casserole dish. Sprinkle with crumbled feta, parsley, and some olive oil. Bake for 10-15 minutes. Serve hot.
