Keto Seafood with Ouzo Casserole

- 1/2 lb squid cleaned in thin washers
- 1 bay leaf
- 1 tsp allspice
- 2 Tbsp garlic-infuse olive oil
- 1 onion finely chopped
- 3 medium zucchini sliced
- 1 cup fresh chard
- 1/2 glass Ouzo
- 1 lb shrimp cleaned
- 1/2 lb mussels without shell
- 1 1/2 cups feta cheese crumbled
- 2 Tbsp parsley finely chopped
- 1/2 cup olive oil
- Salt and black pepper to taste
Preheat oven to 400F/200C.
Boil the squid in water with the bay leaf and the allspice for 15 minutes until they tender and drain.
Heat the oil in the frying skillet and sauté the onion until
softened; season with the salt and pepper. Add sliced zucchini and fresh chard. Pour the ouzo and let simmer for 10 minutes over low heat.
Add shrimps, mussels, and squid; stir Allow to simmer for 3-5 minutes until the shrimp changes color and remove from the heat.
Pour the seafood mixture into a large greased casserole dish. Sprinkle with crumbled feta, parsley, and some olive oil. Bake for 10-15 minutes. Serve hot.
