Keto Seafood “Meatballs”
Ingredients
- 1 lb squid
- 1 lb octopus
- 3 Tbsp ground almonds
- 1 bunch of parsley finely chopped
- Salt and freshly ground pepper
- 1 cup garlic-infused olive oil for frying
- 2 Lemon slices and juice
Instructions
- Clean and wash the octopus and the squid. Cut into small pieces and place in a blender; blend until minced well.
- Transfer the minced seafood to a shallow bowl.
- Add ground almonds, parsley, salt, and pepper; knead the mixture until combined well.
- Cover and refrigerate for 1 hour.
- Remove the seafood mixture from the fridge, and with your hands shape medium balls.
- Heat the oil in a deep frying skillet.
- Fry your seafood “meatballs” until golden from one side.
- Flip and fry from the other side for 1 minutes.
- Drain on a kitchen towel. Serve warm.
