Keto Seafood “Meatballs”

Ingredients
  

  • 1 lb squid
  • 1 lb octopus
  • 3 Tbsp ground almonds
  • 1 bunch of parsley finely chopped
  • Salt and freshly ground pepper
  • 1 cup garlic-infused olive oil for frying
  • 2 Lemon slices and juice

Instructions
 

  • Clean and wash the octopus and the squid. Cut into small pieces and place in a blender; blend until minced well.
  • Transfer the minced seafood to a shallow bowl.
  • Add ground almonds, parsley, salt, and pepper; knead the mixture until combined well.
  • Cover and refrigerate for 1 hour.
  • Remove the seafood mixture from the fridge, and with your hands shape medium balls.
  • Heat the oil in a deep frying skillet.
  • Fry your seafood “meatballs” until golden from one side.
  • Flip and fry from the other side for 1 minutes.
  • Drain on a kitchen towel. Serve warm.
