Bacon-wrapped Mini Meatloaves
Ingredients
- 1 lb 450g ground beef (85% lean)
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder optional, for flavor
- 8 strips of bacon
- Cooking spray or oil for greasing the pan
Instructions
- Reheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper.
- In a large bowl, combine the ground beef, egg, salt, pepper, and garlic powder. Mix until well combined.
- Divide the meat mixture into 8 equal portions. Shape each portion into a small loaf.
- Wrap each mini meatloaf with a strip of bacon, ensuring the bacon ends meet or slightly overlap underneath the loaf.
- Place the bacon-wrapped mini meatloaves on the prepared baking sheet, seam side down.
- Bake in the preheated oven for 25 to 30 minutes, or until the bacon is crispy and the meatloaves are cooked through.
- Let them rest for 5 minutes before serving.
