Keto Pesto Bacon and Eggs

Ingredients
  

  • 2 eggs
  • 3 slices bacon
  • 1 tablespoon extra virgin olive oil or ghee
  • medium avocado
  • Salt and pepper to taste
  • 2 tablespoon pesto

Pesto

  • cup almonds
  • 1 large bunch basil
  • 5 tablespoon extra virgin olive oil
  • 5 tablespoon lemon juice
  • 1 garlic clove, minced
  • ½ teaspoon coconut aminos
  • Salt to taste

Instructions
 

  • Combine pesto ingredients into a food processor and blitz until everything is well incorporated, but the consistency is chunky.
  • Fry the bacon until crispy. Place on a paper towel to drain excess fat.
  • In another pan, melt 1 tablespoon of olive oil or ghee over medium-low heat and coat the bottom of the pan.
  • Crack the eggs into the pan. Sprinkle with salt and pepper and cook until the white has set and the yolk is runny.
  • Serve with sliced avocado, bacon and pesto to taste.
