Keto Pesto Bacon and Eggs
Ingredients
- 2 eggs
- 3 slices bacon
- 1 tablespoon extra virgin olive oil or ghee
- ⅓ medium avocado
- Salt and pepper to taste
- 2 tablespoon pesto
Pesto
- ⅓ cup almonds
- 1 large bunch basil
- 5 tablespoon extra virgin olive oil
- 5 tablespoon lemon juice
- 1 garlic clove, minced
- ½ teaspoon coconut aminos
- Salt to taste
Instructions
- Combine pesto ingredients into a food processor and blitz until everything is well incorporated, but the consistency is chunky.
- Fry the bacon until crispy. Place on a paper towel to drain excess fat.
- In another pan, melt 1 tablespoon of olive oil or ghee over medium-low heat and coat the bottom of the pan.
- Crack the eggs into the pan. Sprinkle with salt and pepper and cook until the white has set and the yolk is runny.
- Serve with sliced avocado, bacon and pesto to taste.
