Instructions
Combine pesto ingredients into a food processor and blitz until everything is well incorporated, but the consistency is chunky.
Fry the bacon until crispy. Place on a paper towel to drain excess fat.
In another pan, melt 1 tablespoon of olive oil or ghee over medium-low heat and coat the bottom of the pan.
Crack the eggs into the pan. Sprinkle with salt and pepper and cook until the white has set and the yolk is runny.
Serve with sliced avocado, bacon and pesto to taste.
