Ingredients
  

  • 1 cup coconut oil
  • 1 cup ghee
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cup stevia or monk fruit sweetener
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon salt
  • 3 cups almond flour

Instructions
 

  • Line a baking sheet with parchment paper and preheat the oven to 350˚F.
  • In a medium sized bowl, using a hand mixer, mix the coconut oil and ghee.
  • Add the sweetener, baking soda, cream of tartar and salt to the same bowl. Mix until well incorporated.
  • Add the almond flour 1 cup at a time and mix with the hand mixer.
  • Form the dough into balls and lightly press down. Place on a cookie sheet (don’t make the balls too big because they will spread during cooking baking).
  • Bake the cookies for 15 to 20 minutes, or until the cookies are golden brown.
  • Remove from the oven and allow them to cool before serving.
