Keto Not Your Average Keto Cookie
Ingredients
- 1 cup coconut oil
- 1 cup ghee
- 2 eggs
- 1 teaspoon vanilla extract
- 3 cup stevia or monk fruit sweetener
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 3 cups almond flour
Instructions
- Line a baking sheet with parchment paper and preheat the oven to 350˚F.
- In a medium sized bowl, using a hand mixer, mix the coconut oil and ghee.
- Add the sweetener, baking soda, cream of tartar and salt to the same bowl. Mix until well incorporated.
- Add the almond flour 1 cup at a time and mix with the hand mixer.
- Form the dough into balls and lightly press down. Place on a cookie sheet (don’t make the balls too big because they will spread during cooking baking).
- Bake the cookies for 15 to 20 minutes, or until the cookies are golden brown.
- Remove from the oven and allow them to cool before serving.
