Preheat oven to 400˚Line a baking sheet with parchment paper.
In a saucepan over low heat, combine the shredded mozzarella and cream cheese. Stir continuously until completely melted.
In a separate bowl, combine the almond flour, psyllium husk powder, basil, oregano, parsley, salt, and baking powder.
Slowly add the eggs to the dry ingredients and begin mixing.
Add the cheese mixture and Parmesan, and mix until thoroughly combined (dough should be sticky to the touch).
Oil your hands to begin forming the breadsticks. Divide the dough into 8 pieces, then form into logs, and divide again into 16 breadsticks total.
Place on the baking sheet evenly spaced apart. Bake for 12 minutes rotating the pan halfway through.
Remove the breadsticks from the oven, and lightly brush olive oil over the tops. Bake for an additional 3 minutes.
Allow cooling slightly before serving.
