Ingredients
  

  • 2 Tbsp tallow
  • 2 lbs corned beef
  • 4 cups cold water
  • 1 spring onion chopped
  • 2 garlic cloves crushed
  • 1 1/2 tsp yellow mustard seeds
  • 1 tsp coriander seeds
  • 3 bay leaves
  • 1 tsp ground ginger
  • 1 tsp fresh chopped parsley
  • Salt and ground black pepper to taste

Instructions
 

  • Grease the bottom of your Instant Pot with the tallow.
  • Add all ingredients from the list in your Instant Pot; stir well
  • Lock lid into place and set on the MEAT/STEW setting for 80 - 90 minutes.
  • Use Natural Release - it takes 10 - 25 minutes to depressurize naturally.
  • Transfer the meat on a chopping board, and let rest for 10 minutes be-fore slicing.
  • Sprinkle with chopped parsley and serve.
