Avocado and Egg Salad
Ingredients
- 3 hard-boiled eggs chopped
- 1 avocado pitted and chopped
- 1 red bell pepper finely chopped
- 6 radishes chopped
- 1 green onion chopped
- 1 T fresh lemon juice
- 2 T sour cream or homemade mayonnaise
- 1 t prepared mustard
- Sea salt and black pepper to taste
Instructions
- In a medium bowl, combine the eggs, avocado, bell pepper, radishes, and green onion.
- Add the lemon juice, sour cream, and mustard. Stir well. Season with sea salt and black pepper to taste.
