Keto Coconut Lime Bars
Ingredients
Crust:
- 6 tablespoons salted butter
- 1 ½ cups superfine almond flour
- ½ cup unsweetened shredded coconut
- ⅓ cup granulated Swerve
- ¼ teaspoon vanilla extract
Filling:
- ½ cup salted butter
- ⅔ cup granulated Swerve
- ½ cup fresh lime juice
- ¼ cup grated lime zest 6 egg yolks
- ¼ teaspoon arrowroot powder
- 1 tablespoon unflavored gelatin
Instructions
Crust:
- Preheat oven to 350°F and line an 8x8-inch baking dish.
- Combine all of the crust ingredients in a bowl. Mix well until a dough forms.
- Press the dough into the baking dish and about ½-inch up the sides.
- Bake for 10 minutes.
- Allow to cool while you make the filling.
Filling:
- Melt butter in a saucepan over a low heat.
- Remove from heat and whisk in Swerve, lime juice and lime zest.
- Slowly add in the egg yolks and continue to whisk.
- Return to the stove and cook over low heat, continually whisking until the curd begins to thicken.
- Remove from heat. Whisk in arrowroot powder and gelatin until completely dissolved.
- Pour filling over the crust and spread evenly.
- Bake for 15 minutes.
- When cooled, cut into squares and garnish with additional lime zest or shredded coconut, and serve.
