Ingredients
  

Crust:

  • 6 tablespoons salted butter
  • 1 ½ cups superfine almond flour
  • ½ cup unsweetened shredded coconut
  • cup granulated Swerve
  • ¼ teaspoon vanilla extract

Filling:

  • ½ cup salted butter
  • cup granulated Swerve
  • ½ cup fresh lime juice
  • ¼ cup grated lime zest 6 egg yolks
  • ¼ teaspoon arrowroot powder
  • 1 tablespoon unflavored gelatin

Instructions
 

Crust:

  • Preheat oven to 350°F and line an 8x8-inch baking dish.
  • Combine all of the crust ingredients in a bowl. Mix well until a dough forms.
  • Press the dough into the baking dish and about ½-inch up the sides.
  • Bake for 10 minutes.
  • Allow to cool while you make the filling.

Filling:

  • Melt butter in a saucepan over a low heat.
  • Remove from heat and whisk in Swerve, lime juice and lime zest.
  • Slowly add in the egg yolks and continue to whisk.
  • Return to the stove and cook over low heat, continually whisking until the curd begins to thicken.
  • Remove from heat. Whisk in arrowroot powder and gelatin until completely dissolved.
  • Pour filling over the crust and spread evenly.
  • Bake for 15 minutes.
  • When cooled, cut into squares and garnish with additional lime zest or shredded coconut, and serve.
