Keto Chopped Salad with Green Goddess Dressing
Ingredients
Salad
- 3 ounces mixed salad greens
- 1 hard-boiled egg halved
- 2 ounces sliced turkey roughly chopped
- ¼ cup cucumber chopped
- 1 tablespoon red onions diced
- 1/3 avocado sliced
Dressing
- 1/6 avocado
- 1 stalk green onion chopped
- 1 tablespoon basil chopped
- 1 tablespoon cilantro chopped
- ½ clove garlic minced
- ¼ teaspoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- ½ tablespoon unsweetened almond milk
Instructions
- For the dressing, combine the avocado, green onion, basil, cilantro, and garlic in a food processor. Pulse to combine.
- Add the remaining dressing ingredients to the food processor, and pulse until the dressing is smooth and creamy. Add water if necessary to thin dressing to desired consistency.
- To assemble the salad, place the mixed greens in a bowl. Top with the egg, turkey, cucumber, red onion, and sliced avocado.
- Drizzle the dressing on the salad just before serving.
